magazine monday: sweet corn with beets and basil!

Mmmm . . .  last night Michael & I had the most delicious meal to cap off yet another perfect summer weekend in Maine.  Shrimp & pepper skewers and a side of sweet corn with beets & basil!  The recipe for the corn & beets salad came from the latest issue of Martha Stewart Living (I know, I’ve been on quite the Martha kick for Magazine Mondays this summer!) and was quite tasty!

Simply cook the corn and cut the kernels off, simmer the beets for 35 minutes (then peel & cut), add fresh basil & olive oil for drizzling- it’s the perfect summer side dish for nearly any meal!
