magazine monday: energizing italian recipes!

On my recent trip out west I was able to squeeze in some good quality time with my father and stepmother who live in Cheyenne, Wyoming.  You can imagine my complete joy when I picked up Food & Wine out of their mailbox one afternoon.  It’s always such a treat to read a magazine to which you don’t subscribe!  After causing some serious afternoon hunger pains and practically drooling all over the magazine, I decided one of their featured recipes would be my next Magazine Monday with Meredith feature!

In the latest issue of Food & Wine, Joe Bastianich, New York restaurateur and avid runner, showcases his favorite recipes that are both healthy and sufficiently fueling for his marathon training.  One of the first recipes listed is a delicious looking salmon dish- one of my very favorite meals.  Since we enjoy salmon regularly, I wanted to try something a little more adventurous.  The Quick White Bean Stew with Swiss Chard & Tomatoes certainly caught my eye.  It looked absolutely scrumptious on the pages of Food & Wine, and unlike the Gourmet Salt Caramel disaster, it was just as yummy in real life!  In honor of Bastianich’s passion for running, I prepared the dish for a post-trail run lunch, which left me craving more for the rest of the day.

    Mmmmm….I sooooo know what I am having for dinner tomorrow!! Of course, I have a feeling you are making it look much easier than it actually is. How about I take a picture of MY kitchen after cooking this!!!?? lol.
