magazine monday: apple pie
Our two bushels of apples that we picked a few weeks ago is slowly disappearing… When they’re gone I will hate not having an excuse to make some sort of sugary-apple-goodness for dessert! Last week when we realized that our hot water heater was broken and we had an absolute mess to deal with in the basement, we called our new neighbor, who, lucky for us just happens to be a plumber. As a thank you for his willingness to rush right over, I baked him and his girlfriend the apple pie from this month’s Real Simple. Since this was my first time baking a pie, I went ahead and made one for Michael & I to test before blindly giving one to our neighbor. Up until this point in my life, I had never really considered myself a “pie person,” but the first bite of this Gingery Apple Crumb Pie threw my distaste for pies right out the window. Over the next few days we enjoyed slices of pie with a dollop of vanilla ice cream for dessert, and when I found out our friends from North Carolina were coming up for an impromptu visit, I was thrilled to have a reason to bake another one of these fantastic pies.

Mmmm! Mmmm! Mmmm! What are you waiting for? Try baking one for yourself today!
LOVE apple pie!
If you ever feel like trying this recipe out again, I bet I know someone who would be happy to taste-test for you! xo.
